On a Roll...*Baking* Roll // QuaranTime w/Rebekah



        Life is stirring outside. Cars are zooming. Summer is officially here. Oh wait, it has already been here...except for the fact that I blinked and then June was over. What else is going on? 

Rebekah is baking! 

       What is the genesis of it all? I mean growing up, we never had cake pans and we still don't. Ghirardelli brownies were a celebrated treat. My Korean mother can cook up a Korean BBQ storm in two seconds, but we never had homemade baked goods. My parents learned how to live growing up as children of farmers - not to indulge in buttery, sugary foods that we gobble down in the West. 

        It all started when I asked my sister for the recipe she used to make tortillas. I made my family a taco dinner, and of course I could tell my dad was on the verge of reaching for kimchi and rice. Rolling it out was really fun, so then I decided to make homemade pasta and pie dough in the same day. After that I was exhausted but I had all of this leftover pie dough. With a mini oven-safe container, I made three different pies and some tarts that I gobbled up. Don't worry - I was also almost passing out from running and then doing the Chloe Tings workout, haha. 
        And then, and then, and thennn I made a mango lime tart that my mom really loved. So, we are on this baking roll! Cooking and baking is tiring, but one thing that is more tiring is shopping for the groceries. *Shudder* I don't know why, I think it's because wearing a mask is pretty uncomfortable and I feel trapped in a store with other customers who sometimes get too close to you. Anyways, here are some baked goods I've made. Enjoy! 


- Apple Rose Tarts -
I saw these on Pinterest and I *had* to try it - just look at it!
Using a knife, slice apples thinly. Cover the slices with lemon juice, butter, and a dash of cinnamon. Microwave for 30 seconds and then overlap the slices in a horizontal line. Use the pastry to connect the apple slices, and roll it up! This was a bit slippery and tricky, but it was very fun.

- Mini Blueberry Pie -
-Strawberry Tart-
These were both extremely good - perhaps one of the best things I've made? In my opinion.
The homemade blueberry and strawberry jam fillings just complimented the golden crust so well. 
My favorite part was creating the lattice on top. 


-Blueberry Lemon Bundt Cake - 
We have a random bundt pan in our house because someone gave it to us years ago. It was never used or touched in this household, it was almost in danger of becoming a myth to all kitchen materials as we know it. 


Very fluffy, light, but packed with a lemon punch from the glaze!
The key was Greek yogurt, and cake flour. I don't have cake flour, but you can make it by sifting all purpose flour and corn starch. 

        Please comment down below a baked good that you challenge me to make! I've been eyeing various recipes but they require ingredients with dairy (or stuff that will make my stomach explode) or a mixer. That is my one downfall - we don't have a handheld mixer so when I have to mix it is quite...annoying. 
        Today is my week of rest from exercising, I will be back on it next week! Also, I am getting back into sewing and once I get fabric I will definitely be posting whatever I make - if it is successful.  I'm planning to cook for this Saturday (Fourth of July) so be on the lookout for that :) Have a great day and go bake something!

  1. I dare you to make challah bread - I saw it on the Great British Baking Show and it was so funny how everyone was messing up (not that you will)
    Also I’m waiting for that banana *cream* pie...

    1. Haha I need to get yeast, but the banana cream pie still haunts me because I vowed that I would make it this summer.
